Magic Pumpkin Bars

Prep time: 10 mins Cook time:
40 mins Total time: 50 mins
Serves: 15

2 cups graham cracker crumbs (I'm using Ginger Snaps)
½ cup butter, melted
1 (11 ounce) bag Kraft Caramel Bits
1 (11.5 ounce) bag milk chocolate chips
1 (14 ounce) can sweetened condensed milk
¾ cup pumpkin puree
1 teaspoon pumpkin pie spice
1½ cups sweetened shredded coconut

Preheat oven to 350° F.

Spray a 9 x 13 inch baking pan with nonstick cooking spray.

In a medium mixing bowl, combine graham cracker/ginger snap crumbs and melted butter until combined.

Press graham cracker/ginger snap mixture into the bottom of prepared baking pan.

Sprinkle caramel bits over graham cracker/ginger snap crust.

Sprinkle chocolate chips over other layers.

In a small mixing bowl, combine sweetened condensed milk, pumpkin puree and pumpkin pie spice.
Pour pumpkin mixture over crust and other layers.

Sprinkle coconut in an even layer over the top.

Bake for 35-45 minutes, or until the edges are golden brown and the middle is set up.

I am also going to put cinnamon chips (Hershey's makes these) and chopped pecans on these, cut the chocolate chips in half and do a cup of them and the caramel bits, cinnamon chips and pecans.

I'll let you know how they turn out and how they go over at work

No nuts or coconut here either, but I'm totally making this with ginger snaps. I have a recipe for a pumpkin pie that looks incredible, the crust is also made with ginger snaps. I'm so excited for thanksgiving. I'll post that recipe later if anyone might want it, I haven't tried it yet.
