I made another batch of my muffins this morning! They are absolutely delicious!!
2 cups all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup light brown sugar
1/2 cup butter (softened)
2 eggs, beaten
3-4 medium ripened bananas (well ripened)
1 cup walnuts (or pecans)
Preheat oven to 350 degrees. Butter & flour muffin tins or use paper liners.
Combine dry ingredients into a large mixing bowl. Combine sugar & butter in a medium sized bowl. Mash bananas. Add bananas and eggs into sugar/butter mixture and blend well.
Add wet mixture into dry mixture and mix so all is moistened. Fold nuts into mixture. (I reserve some for the tops of the muffins).
Using an ice cream scoop, fill muffin tins 3/4 of the way full. Sprinkle remaining nuts on top.
I make 6 large muffins and 8 medium muffins with this mixture.
Cook in pre-heated oven for 25 minutes. Muffins are done when a toothpick inserted into middle comes out clean.
When done, put on a metal rack to cool for at least 10 minutes.
Enjoy!!
