Jumbo:
1 pound boneless/skinless chicken breast
8 ounces salad shrimp
2 cans peas and carrots
2 cups of rice
4 cups chicken broth
2 large can cream of chicken soup
spices to taste
*Cook the chicken breast until nearly done and add shrimp. When chicken is done, drain both.
*Cook rice, using chicken broth instead of water, while chicken is cooling. Dice/cube chicken while rice is cooking.
*Add chicken, shrimp, peas, carrots, spices and cream of chicken soup to rice and mix thoroughly.
*Allow to simmer for 5-10 minutes until everything is well heated.
**I have tweaked this recipe numerous times.. the original recipe only called for rice and chicken! It is also pretty good with broccoli and/or corn in it, and we have made it with turkey sausage before as well.
