I was going through some recipes today, looking for something, and found my mother's original eggplant casserole recipe on a card. It was in my childish handwriting as my mother apparently dictated it to me, since she didn't have a recipe. I'm giving it here verbatim because I thought it was too funny how I wrote back then. Italics are comments I made today.

Pizza Eggplant From the kitchen of: Mama
Serves: 2 Qts

1. Peel eggplant & chop into cubes.
2. Bring salted water to a boil & add eggplant cubes.
3. Boil eggplant 'till tender & drain.
Next-
I put all of this in large brackets. {In skillet pour 2 8oz. cans tomato sauce
ADD- 3 T worcestershire sauce
-3/4 teaspoon garlic powder or salt <(garlic)
-2 teaspoons oregano leaves & 2 bay leaves
-dash Tobasco (to taste)
Saute 'bout 3 slices of onion in 'bout 3 slices of butter (you know, to taste) & add to tomato sauce mixture.
(P.S heat all of the above)}
Then-pour half eggplant into casserole dish (layer on bottom) pour half tomatoe sauce mixture over that. Top with strips...over please> other side of card of mozzarella cheese (generously!).
Alright now! Add other half of eggplant ((something I scratched through and called boo-boo)) Mom's gone to answer the phone (please wait).

OK: Add remaining tomatoe sauce mixture over that (this is layered)
Add another layer of cheese & bake in oven at 400* for 'bout 30 min. (or until set)
(maybe 350*)
