Chicken Casserole

What you need:
13x9 pyrex dish
rice
chicken (I used leftover baked chicken, but canned chicken works too... use 2 large cans)
peas
carrots
broccoli
shredded cheese (I used a total of 1/2 a package which is about 2 cup size... so 1/4 cup in it and 1/4 cup on top)

Preheat the oven to 350

*Prepare rice as directed (depends on how many servings you want to make, but you want enough to line the bottom and top of the dish)
*add the chicken and can veggies
*steam the broccoli to almost done and add it (if you steam it to done, it may get too mushy)
*top with the rest of the rice
*add 1/4 cheese
*mix the casserole together
*top with 1/4 cup of cheese
*bake for 8 minutes or until the cheese is well melted

works well with leftover turkey too ;)
we tried it with corn but my husband didn't like it as much.
 
Usually my leftover chicken is in the frig. Would 8 minutes be enough to heat it up? Yeah, I ask dumb questions. LOL
 
[size=x-small][color=0000CC]No such thing as a dumb question! Mine was in the fridge too.. I set it out on the counter while the rice was cooking and so it wasn't fridge cold (was closer to room temp) when it went into the oven. Everything was plenty hot after 8 minutes :)[/color][/size]
