Nicole has now been mourning Daniel longer than they were actually together as a couple.

That has nothing to do with it.

We saw little to no buildup whatsoever to Nicole and Daniel's relationship as a couple. One minute she was trapped with Eric declaring him as the love of her life, the next minute she was living with and engaged to Daniel. No story development in between. The show never connected the dots here. Prior to that, we saw Daniel reject Nicole repeatedly and not in a nice way either. How many times did we see him slam the door in her face? This was not some great love story as the show is trying to proclaim. So, yes this makes Nicole mourning him now for almost a year even more ridiculous.

Mourning for long periods of time (or a lifetime) in real life is normal. But Daniel has been given a mourning period in Salem not afforded to other characters. Characters that had been around much longer or had stronger ties to the community. Even newbies with strong ties to the Salemites barely got a second thought. Like Paige. She's the granddaughter of Shane and Kim. Yet no one is seen grieving her death (except for the brief scene yesterday with Eve).

Even though your comments about their relationship are accurate, I still say that doesn't matter. Nicole loved Daniel despite all that. There is no time limit on mourning. I can vouch for that, personally, as many of us probably can.
