Denise's Greek Bean Salad

Any of the following beans may be used or pick some of your own choosing.
I mix it up depending on what I have.

Canalleni Beans~~~~Great Northern Beans~~~~Dark & Light Kidney Beans
Pinto Beans~~~~~~~Black Eyed Peas~~~~~~~~~Chick Peas
Black Beans~~~~~~~~Roman Beans~~~~~~~~~~~ Navy Beans

FRESH Parsley~~~~~~SPRING Onion~~~~~~GOOD Olive Oil
FRESH Lemons for Juice~~~~~~~~~~~~Salt & Pepper to Taste

Drain & Rinse Beans and put in a bowl.
Chop Parsley and add to bowl.
Chop Spring Onions and add to bowl.
Squeeze several fresh lemons for the juice.
Add the juice and the olive oil to taste.
Add Salt & Pepper to taste.

Be generous with the lemon juice & olive oil.
Stir before serving.
Sorry for not giving exact measurements, but it depends on the amount you want to make and the beans you start off with as to how much of the parsley,onions,oil & lemon juice you need.
I personally like to get a good tast of the lemon.
I am required to bring this to all of the cook outs and parties I go to. My family & friends love it.

Olive oil and lemon juice are good on a lot of veggies like green beans instead of butter although I do love butter!
 
You'll probably laugh at me......I eat most of my veggies with nothing on them. No salt, pepper, butter, etc.
I do that a lot too.
Learned to eat them butter free when I was on weight watchers diet 45 years ago!
Only recently I started wanting salt on some of my food. Don't know why I started to crave it...
I use to be able to keep a pound of salt around for 5 years or more!
