Hearty Italian Sausage Soup

Makes 10-1 cup servings

1 pound Italian ssausage, sliced (I use hot)
1 onion, chopped
2 cloves garlic, minced
1 teaspoon olive oil
2 cans (14 oz.) chicken broth
1 soup can water
1 can (15 oz.) cannellini beans, rinsed
1 can (14.5 oz.) stewed tomatoes, undrained
1 cup rotini pasta, uncooked
1 1/2 cups baby spinach leaves
Mozzarella Cheese
Crackers

Cook suasage, onions and garlic in oil in large saucepan 10 minutes stirring frequently. Add next 4 ingredients. Bring to a boil. Stir in pasta; cook 8 minutes or until tender. Remove from heat. Stir in spinach cover. Let stand 5 minutes. Top with cheese. Serve with crackers.

NOTE: I also make this and put in crock pot on warm I add the pasta uncooked and let it cook in the soup and add the spinach 5 minutes before serving!

This is called pasta e fagioli. I make it quite often since my Mom came over from Italy, and I was raised on it. The traditional Italian way is with parmesan cheese. I'll have to try it with the mozzarella the next time. Some people also use escarole instead of spinach. Any way you make it, it is always delicious.
