Spiced Chickpeas
2 cans chickpeas, drained, rinsed and patted dry
1 tablespoon extra-virgin olive oil
1 tablespoon salt-free seasoning mix
1 teaspoon chili powder
Mix the ingredients until the chickpeas are evenly covered with the olive oil and spices. Pre-heat your oven to 425 F, and bake the chickpeas on a cookie sheet for approximately 30 minutes, or until the chickpeas are lightly brown and crunchy.
 
Just a follow up note. I just made a batch of these. I like crunchy, and I find I need a lot more than the 30 minutes to get as crunchy as I want them to be. They taste good, tho'.
 
I'm gonna make this tonight. As a last minute thought I wonder how these would be with a dried Hidden Valley Ranch packet to season them? And the calories wouldn't be too bad.
 
Yuck! I baked them for 45 minutes and still no crunch.
